icona Distillation The pomace is distilled as soon as the sugary fermentation is over, favored by the contribution of selected yeasts, taking into account the pH and acidity. The fermentation takes place in steel tanks immediately after the destemming and soft pressing of the grapes. For the distillation we use our discontinuous bain-marie alembic of the newest conception. At the end of the process, a high-grade tank (73°-78°) is obtained, which is placed in special stainless steel tanks awaiting subsequent processing.
