Raw Materials: Cabernet, Syrah and Rebo grape pomaces; selected, fresh
Grape Processing: the grape undergoes a soft pressing in order to mantain its tipical aromas
Distillation: grape pomace is distilled as soon as fermentation is complete, assisted by the addition of cultured yeasts. Fermentation occurs in dedicated tanks, with the opportunity to monitor the temperature, immediately after grapes are destemmed and pressed. The bain-marie alembic we use allows us to distill very fresh pomaces.
At the end of distillation the product obtained is a 73 - 78% Vol. grappa.
Ageing: this Grappa rests for 18 months in small oak casks of diverse origin, to obtain a unique blend of aromas
Bottling: after an 18-month ageing the product is diluted until reaching 52% Vol. and subsequently filtered at 0-2 ˚C
Packaging: cartons containing 6 0.70 l bottles in square-shaped cases
Colour: deep amber tending to golden yellow
Nose: delicate, warm, smooth, recalls the fragrance of bread, vanilla and dried fruit
Palate: rich, mouthfilling, very elegant, very persistent with hints of chocolate and almond
Notes: we suggest to let this grappa rest for a while in the glass, before the consumption, in order to enhance the array of aromas.
